A couple of family members have sent me messages recently letting me know that they were trying my recipes. It made me really happy and made me feel connected to them, even though they’re thousands of miles away. So even if you don’t know me, but you’re trying my recipes, please drop me a note and let me know how you like them! It really makes my day.
And if you haven’t tried any of them yet, please let this be your first. Its quick, its easy, and its really really delicious (especially with a tablespoon of vanilla ice cream on top).
Here’s what you need:
Store-bought pie crust (or homemade, if you prefer)
2 cups mixed fresh berries, chopped up (I used strawberries and raspberries)
1 tsp. cornstarch
1 1/2 tbsp. sugar
a teensy bit of flour
Here’s how easy it is:
1. Preheat your oven to 400 F.
2. Mix your sugar and cornstarch together.
3. Sprinkle the sugar mixture onto the berries, and stir to coat.
4. Dust your counter with flour and unroll the pie shell.
5. Use a pint glass to cut out circles. I also experimented with using a bigger cup (a Hawks/Thrashers game souvenir) and that gave me a nice deep pie, so you could do that if you prefer
6. Drop your crust circles into the muffin pan cups, and pile each one with berries.
7. Pop them in the oven for 25 minutes, or until they’re juicy and bubbling.
There are the perfect little dessert for baby/bridal showers or backyard bar-b-ques. Pin it and don’t forget it! I’m going to use raspberries and blackberries next time. I think it’ll be even better!
