I’m incredibly excited to announce the birth of my nephew, Charlie. He was born around 5:30 yesterday evening and he’s absolutely amazing. I can’t wait to meet the little guy later this week. A huge congratulations to my brother and sister-in-law; I’m so proud of you both.
Speaking of children, here’s a little story from my youth-
Every summer growing up I’d go spend a week or two at Mt. Gilead Camp for girls in the Poconos. I made friends, went canoeing, made campfires, rode horses, and grew closer to God. I have so many wonderful memories from those summers, one of which was lining up in the canteen shop for a Nestle Tollhouse Ice Cream Sandwich. Now that I’m a grown-up, I can make these yummy sandwiches at home
and eat them for breakfast everyday.
They’re really easy, but I suggest making them in advance. Just make your favorite chocolate chip cookies. My favorite recipe comes straight off the Tollhouse bag- they always come out perfectly!
Let your cookies cool completely and pull the ice cream out of the freezer so it softens a little. I chose chocolate because I’m obsessed with it, but vanilla is the classic. Something fun like cookie dough would taste great, too!
Once the ice cream is softened a little, find two cookies that are the same size. Carefully scoop out some ice cream and layer it between the two cookies, then gently press them together. For a pop of color, you can sprinkle the edges with some sprinkles. Then pop them back in the freezer for a little while to get firm.
These are the most summery dessert I’ve made yet, and the timing is perfect because San Diego is the hottest its been since we moved here. What’s your favorite summertime treat?
