Diet-Friendly Dinners

In my personal life, I’m kind of known for my desserts.  My cupcakes have an especially good reputation.  And it’s true: I do have a passion for baking.  But I also really love cooking hearty, healthy meals.  So after you’ve tried my  cookie dough brownies and  verified my kitchen cred, I hope you’ll try replicating one of my healthier meals.  Above I’ve picked four (very different) healthy entrees from my archives.  They’re all pretty quick and easy, except for the tofu which took a while and involved a lot of chopping.

On that note: I love reader feedback on my recipes.  Even if the post is old, please comment and let me know how the recipe turned out for you.

  1. I don’t remember if I told you that I tried the Crockpot Salsa Chicken a month or two ago. The only problem is that I should have doubled the recipe since it was so delicious! 🙂 I’m going to have to try the flank steak or the Salmon sometime soon! Thanks!!

  2. The flank steak – ohf, that’s all I’ve got to say. You’ll be getting feedback on that one! A favorite healthy recipe of mine is tilapia with mango salsa. It’s so simple and totally yummy 🙂

    • I want to find some good go-to tilapia recipes. I like including a lot of fish in my diet but I’m getting pretty sick of salmon. Unfortunately, mango is on the (very short) list of things I don’t like. Otherwise I’d be asking to get my hands on your recipe!

      • Aw man! I didn’t like mango at first but for some reason I am obsessed now. I eat a ton of fish so I’ve come up with some good variations. One of my favorites is a fish pasta recipe I actually found in an LL Cool J (I know) cookbook. All it is is fish, brocholli, peas, pasta and mayo all mixed together. My favorite is coating Swai in old bay seasoning and grilling it – it gives the pasta a little flare. That recipe would work with Tilapia, too! 🙂

    I used to be only a dessert girl in terms of cooking, but I slowly got into cooking for other meals and now I’m obsessed. These all look so yummy…salmon is definitely my favorite healthy meal. I always feel so good when I eat it!

  6. Another favorite salmon recipe of mine is coating salmon in a salty sweet mixture and wrapping it in a foil packet in the oven- there are plenty of recipes that use maple syrup, soy sauce, and minced garlic. I make it up as I go and it always ends up moist and delicious!
